after reading someone elses post about UJSSM aged on cherry wood as a "favorite" i thought i would try it out.
i baked some cherry heartwood at 380 for 2 hours and gave a heavy char.
in 2 litres of single run UJSSM i put in approx 15 sq inches of blocks. it colored up and flavoured up quickly. has an interesting flavour and stunning color. but everytime i have a glass it give me a headache. either soon after or the next morning.
now i just grabbed two middle jars of single uj that smelled/tasted good for this experiment. which i have had good success on many other runs to add a couple litre to the aging jar (i keep a big-ass "mother" jug with my favourite wood blend in it for sipping stock) The "prized" stuff goes elsewhere for longer term aging...i digress:
do you suppose the wood has anything to with it or did i just screw this run up and smear heads deep into the middle, where these came from??

Do you taste heads when you drink it? If it has enough heads to give you a headache, surely you should taste the heads "bite" and pick up the chemical smell. Where did you get the cherry; was it "raw" wood or has it been treated with anything?

Would you happen to know what type of cherry it was? I am not certain but I would be leary of wild cherry. The fruit tree would be fine.

Wild cherry will give you a bowel issue " The Scoots" if you cook on it. Im sure soakin spirits in it would not be so good for ya.

Did the white dog also give you headaches or just the spirits aged on wood...???

unfortunately i did not keep a baseline whitedog from that particular run. the SOP around here is grab a jar or two from the middle of the run, save the rest for 1.5x and then when the 1.5 run goes i usually get to keep 4 jars, the rest goes to feints.
all of the other runs of single UJ has been very palatable and keeping the tightest cut in the middle for sipping has been successful for white and for the "mother" carboy (3 gallons that stays between full and 1/2 full.)
the single run UJ is headache free. (all other 16 generations)
the two litres i did with cherry were jars next to each other (not blended) but gave the same headache... and it only takes one "two finger" glass full. ok...they are fat fingers
i aired them for 3 weeks under a paper towel on wood, and then took them off wood and bottled for about 4 months.
the wood is from what i can tell a big tree, heartwood, and sold as a BBQ smoke "chunk" wood.
no noticiable negative GI tract issues (and i'm one that would notice)
tastes fruity, and smooth as glass.
