hey one and all hoping to (sucessfully) make a batch of scotch whisky. so far i've made 2 neutral wash's, both have turned out a bit off smellying(but 80% to 90%) due to tuning my home made still. I'm currently fermenting a wort that i've used from a recipe on this site, but it's been 2days and the batch doesn't seem to be bubbling. I'm using an Ale yeast so maybe i've go to give it more time.
Cheers Jim

Are you just out for some mental calishthenics or are you asking us a question? From what I'm readin I would put you at about the "on-ramp" to the service road that will eventually lead to the distilling super highway. What did you put in the fermentor?
Speaking from my own experience, I wish I would have stuck with making a decent/good vodka type spirit before I ventured out into the rum and other ferments. Learning the complexities of the processes involved with distilling would be a little less complicated without setting out trying to achieve specific flavors. When I got started I was all enthusiastic about all of the "possibilities" out there and couldn't wait to get started. Looking back, I think learning how to run the still is an important step.
good luck

Yo, jimslick... Welcome...
If you haven't seen any activity from the yeast yet then you either need more yeast or warmer temperatures...
What recipe are you using...???
